As autumn weather and apple season has fallen upon the Western Carolina mountains, I’ve had a burning urge to bake an apple pie. What a simple joy, a simple comfort, that I’ve always saved for Thanksgiving and Christmas but seldomly “just because”! So, when two of my sons came home for an unexpected visit recently, there was my perfect excuse to bake one. Apple pie has always been a sure way to my own father’s heart, so I have baked MANY for him in my 58 years of life but baking a pie of comfort for my own children brings an even sweeter joy to my heart.

Kim’s Simple Apple Pie

  • Heat oven to *425
  • 2 9” pie crusts
  • 8C peeled, cored and thinly sliced MacIntosh apples
  • 1C sugar
  • 1tsp cinnamon
  • Butter, milk, sugar

Mix the sugar and cinnamon together and add to the prepared apples. Pour into your 9” pie plate lined with the bottom crust, dot with several small bits of butter and then cover with the top crust. Brush the top with a small amount of milk and sprinkle lightly with some sugar. Bake at *425 for about an hour or until your pie is golden brown and the juice runs thick and bubbly.
